Tucked away in Port Townsend, we use the 150 gallon still to craft high quality spirits.
In true community spirit, Admiralty maximizes local ingredients: water from the Olympic Mountains, pears and apples from local orchards, rye from Finnriver Farm, local grapes, foraged herbs and other ingredients to reflect the Quimper Peninsula.
Admiralty’s award-winning Marc Brandy, styled after classic Italian Grappa, uses pomace (grapes after crushing and pressing) from local premium wineries. The fruits for his brandies come from local Port Townsend area trees.
The spirits you’ll sample at the tasting room include eau de vie- seasonal clear brandy made from local fruit in season like yellow plum, and award-winning Pennant Gin™, made from grapes with accents of juniper, savory spices, with a hint of local lavender. Whiskey and Rebellion are sold based on availability. This year we will launch our experimental series and a couple surprises.
